INGREDIENTS

CAKE

  • 2 cups regular flour
  • 1 tablespoon baking soda
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 20 oz crushed pineapple can

TOPPING

  • 1/2 cup salted butter
  • 1 tsp  vanilla extract
  • 2/3 cup evaporated milk
  • 1 cup sugar, granulated
  • 1 cup pecans, chopped
  • 1 cup shredded sweetened coconut

INSTRUCTIONS

  1. Preheat the oven to 350 degrees Fahrenheit and butter a 9×13″ baking pan.
  2. In a large mixing bowl, combine the flour, sugar, baking soda, eggs, vanilla extract, and crushed pineapple.
  3. Bake for 40-45 minutes, or until golden brown, in a baking pan.
  4. Using the handle of a wooden spoon, make several holes in the cake.
  5. In a medium sauce pan, bring the butter, sugar, evaporated milk, and vanilla to a boil.
  6. Cook for about 5 minutes on medium heat, stirring constantly, after adding the pecans and coconut.
  7. Spread the topping evenly over the cake, slice, and serve!
