Loaded Chicken Parmesan Mac & Cheese Casserole
Ingredients:
2 cups elbow macaroni
1 lb boneless, skinless chicken breasts, diced
2 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
2 cups marinara sauce
2 cups shredded mozzarella cheese
1 cup shredded Parmesan cheese
2 cups milk
2 tbsp butter
2 tbsp flour
1 cup breadcrumbs
1/4 cup chopped fresh basil
Salt and pepper to taste
Instructions:
Preheat oven to 375°F (190°C).
Cook macaroni according to package directions. Drain and set aside.
In a skillet, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through. Remove and set aside.
In the same skillet, add onion and garlic. Cook until softened.
Stir in marinara sauce and bring to a simmer.
In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
Gradually add milk, stirring constantly until thickened.
Add shredded mozzarella and half of the Parmesan cheese to the milk mixture. Stir until melted and smooth.
Combine cooked macaroni, chicken, and cheese sauce in a large bowl.
Spread half of the macaroni mixture in a baking dish. Top with half of the marinara sauce.
Add the remaining macaroni mixture and top with the remaining marinara sauce.
Sprinkle the remaining Parmesan cheese and breadcrumbs over the top.
Bake for 25-30 minutes, until the casserole is bubbly and golden.
Garnish with chopped fresh basil before serving.
Notes:
For extra flavor, add a pinch of red pepper flakes to the marinara sauce.
