Spinach and Feta Puff Pastry Pockets
Recipe
1 sheet of puff pastry, thawed
10 ounces frozen spinach, thawed and squeezed dry
1/2 cup feta cheese, crumbled
1/4 cup grated Parmesan cheese
1 egg, beaten
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
Instructions:
Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare the Filling: In a bowl, combine the spinach, feta cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
Assemble the Pastries:
Roll out the puff pastry sheet on a lightly floured surface.
Cut each sheet into 4 squares.
Place a spoonful of the spinach and cheese mixture in the center of each square.
Fold the pastry over to form a triangle or rectangle and press the edges with a fork to seal.
Brush with Egg Wash: Brush the tops of the pastries with the beaten egg.
Bake: Place the pastries on the prepared baking sheet and bake for 15-20 minutes, or until golden brown and puffed.
Serve: Let cool slightly before serving.
Tips:
Add-ins: For extra flavor, add chopped onions, garlic, or red pepper flakes to the spinach mixture.
Cheese: Feel free to experiment with different types of cheese, such as ricotta or mozzarella.
