Chicken piccata with lemon sauce

Ingredients:
– 4 boneless, skinless chicken breasts
– Salt and pepper
– 1/2 cup all-purpose flour
– 2 tablespoons olive oil
– 4 tablespoons unsalted butter
– 1/2 cup chicken broth
– 1/4 cup fresh lemon juice
– 1/4 cup capers, drained
– 2 tablespoons fresh parsley, chopped
Instructions:
1. Prepare the Chicken:
– Season the chicken breasts with salt and pepper. Dredge them in flour, shaking off any excess.
2. Cook the Chicken:
– Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
– Add the chicken breasts and cook for about 3-4 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
3. Make the Lemon Sauce:
– In the same skillet, add the chicken broth, lemon juice, and capers. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan.
– Let the sauce reduce slightly, then stir in the remaining 2 tablespoons of butter until melted and the sauce has thickened.
4. Finish the Dish:
– Return the chicken to the skillet, spooning the lemon sauce over the chicken.
– Cook for another minute or so to heat the chicken through and allow the flavors to meld.
5. Serve:
– Sprinkle the chopped parsley over the chicken before serving. You can serve this delicious Chicken Piccata with pasta, rice, or a side of vegetables.
