Ingredients:
* 4 large eggs
* 1/4 cup milk
* 1/4 teaspoon salt
* 1/8 teaspoon black pepper
* 1 tablespoon butter
* 1/2 pound breakfast sausage, cooked and crumbled
* 1/2 cup shredded cheddar cheese
* 4 large flour tortillas
Instructions:
* Make the egg mixture: In a bowl, whisk together the eggs, milk, salt, and pepper.
* Cook the eggs: Heat the butter in a large skillet over medium heat. Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are set but still slightly moist.
* Assemble the roll-ups: Spread a thin layer of the cooked sausage over each tortilla. Top with a layer of the scrambled eggs and then sprinkle with the cheese.
* Roll the tortillas: Roll up the tortillas tightly and secure with toothpicks if desired.
* Cook the roll-ups: Heat a griddle or skillet over medium heat. Cook the roll-ups for 2-3 minutes per side, until golden brown and heated through.
* Serve: Remove the toothpicks (if used) and serve the roll-ups warm.
