Hearty, cheesy, and perfect for feeding a hungry crowd—this Amish breakfast casserole is packed with shredded potatoes, savory meat, and gooey cheese in every bite. A morning favorite made simple!
Ingredients:
1 (16 oz) package frozen shredded hash browns, thawed
1 ½ cups shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1 small onion, chopped
1 cup cottage cheese
6 large eggs
1/2 teaspoon garlic powder
Salt and pepper to taste
1 tablespoon olive oil or butter
Optional add-ins:
1 cup diced turkey sausage or beef sausage (pre-cooked)
1/2 cup chopped green bell peppers or spinach
Directions:
Preheat oven to 350°F and lightly grease a 9×13-inch baking dish.
In a large skillet, heat olive oil or butter over medium heat. Sauté onions (and bell peppers, if using) until soft, about 3–4 minutes.
In a large bowl, whisk eggs. Add hash browns, cottage cheese, shredded cheeses, sausage (if using), onion mixture, garlic powder, salt, and pepper. Stir until well combined.
Pour mixture into the prepared baking dish and spread evenly.
Bake for 40–45 minutes, or until the top is golden brown and the center is set.
Let rest for 5–10 minutes before slicing and serving.
