Let me tell you, this Chickpea and White Bean Soup was a huge success at last night’s warm family supper! My kids begged for more, and my husband couldn’t quit gushing about how filling and tasty it was. It pleasantly delighted everyone with its unexpectedly high level of deliciousness and was the ideal meal for a cold evening. That is one dish I will be preparing again and again!
Things needed:
– One can of white beans – One can of chickpeas – One chopped onion – Two diced carrots – Two chopped celery stalks – Three minced garlic cloves
1 teaspoon of dried thyme-four cups of vegetable broth
– Season with salt and pepper according to personal preference?
Instructions:
1. Saute the garlic, carrots, onion, and celery in a big saucepan until they are softened.
Second, throw in the white beans, chickpeas, thyme, salt, and pepper along with the vegetable broth.
3. After the soup comes to a boil, lower the heat and simmer for around 20 minutes.
4. Mash the soup with an immersion blender until it reaches the consistency you like.
5. Enjoy when hot!
