Chinese Beef and Onion Stir Fry
Ingredients:
1 pound (450g) beef (such as flank steak or sirloin), thinly sliced against the grain
1 large onion, sliced
2 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
1 tablespoon cornstarch
2 tablespoons vegetable oil (for cooking)
Salt and pepper to taste
Optional: sliced green onions for garnish
Directions:
Marinate the beef: In a bowl, combine the thinly sliced beef, 1 tablespoon soy sauce, and cornstarch. Toss to coat the beef evenly and set aside for about 10-15 minutes to marinate.
Prepare the stir-fry sauce: In a small bowl, mix together the remaining 1 tablespoon soy sauce, oyster sauce (if using), and a pinch of salt and pepper. Set aside.
Cook the beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beef in a single layer (you may need to do this in batches) and cook for 2-3 minutes, stirring occasionally, until the beef is browned and cooked through. Remove the beef from the pan and set aside.
Sauté the onions and garlic: In the same pan, add the remaining 1 tablespoon of oil. Add the sliced onion and cook for 2-3 minutes until they begin to soften. Add the minced garlic and cook for another 30 seconds until fragrant.
Combine and stir-fry: Return the beef to the pan and pour in the stir-fry sauce. Toss everything together until the beef and onions are evenly coated and heated through, about 2-3 more minutes.
Serve: Taste and adjust seasoning with salt and pepper if needed. Garnish with sliced green onions if desired, and serve over steamed rice or noodles.
