Ingredients:
* 1 1/2 cups (190g) cake flour
* 1 1/2 cups (300g) granulated sugar
* 1 1/2 teaspoons baking powder
* 1/2 teaspoon salt
* 1 cup (240ml) milk
* 1/2 cup (120ml) vegetable oil
* 2 large eggs
* 1 teaspoon vanilla extract
* 1/2 cup (120ml) boiling water
Instructions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
3. In a separate bowl, whisk together the milk, oil, eggs, and vanilla extract.
4. Gradually add the wet ingredients to the dry ingredients, whisking until just combined.
5. Slowly pour the boiling water into the batter, whisking constantly. The batter will become thin and runny.
6. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
7. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Frosting:
* 1 cup (2 sticks) unsalted butter, softened
* 4 cups (480g) powdered sugar
* 1/4 cup (60ml) milk
* 1 teaspoon vanilla extract
Instructions:
1. In a large bowl, cream together the butter and powdered sugar until light and fluffy.
2. Gradually add the milk and vanilla extract, beating until smooth.
3. Frost the cooled cake and enjoy!
Tips:
* For a more intense vanilla flavor, use vanilla bean paste instead of extract.
* You can add other flavors to the cake, such as chocolate chips, nuts, or fruit.
* For a smoother frosting, use a stand mixer with a paddle attachment.
