Mashed Potato Cakes 🥓
Ingredients:
2 cups mashed potatoes
1 cup shredded cheddar cheese
6-8 strips bacon, cooked and crumbled
1/4 cup green onion, diced
1 tsp salt
1/2 tsp pepper
2 eggs, beaten
1 cup flour
2 cups panko crumbs
Instructions:
Fry the bacon until crispy and drain on a paper towel until cool, then crumble into small bits.
Place the bacon bits in a large bowl, and add mashed potatoes, cheddar cheese, and green onions. Stir to combine.
Line a baking pan with parchment paper and spread the mashed potato mixture evenly across the pan. Freeze for 30 minutes.
Use a circle cookie cutter to cut out circles from the mashed potato mixture, setting them aside as you go.
Prepare a dredging station with three bowls: one for flour, one for beaten eggs, and one for panko crumbs.
Dip each potato cake first into flour, then eggs, and finally panko crumbs.
Place the coated potato cakes in an Air Fryer in a single layer and cook at 370°F for 6-8 minutes.
Serve immediately for the best crispy texture.
