INGREDIENTS
CAKE
- 2 cups regular flour
- 1 tablespoon baking soda
- 2 cups granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 20 oz crushed pineapple can
TOPPING
- 1/2 cup salted butter
- 1 tsp vanilla extract
- 2/3 cup evaporated milk
- 1 cup sugar, granulated
- 1 cup pecans, chopped
- 1 cup shredded sweetened coconut
INSTRUCTIONS
- Preheat the oven to 350 degrees Fahrenheit and butter a 9×13″ baking pan.
- In a large mixing bowl, combine the flour, sugar, baking soda, eggs, vanilla extract, and crushed pineapple.
- Bake for 40-45 minutes, or until golden brown, in a baking pan.
- Using the handle of a wooden spoon, make several holes in the cake.
- In a medium sauce pan, bring the butter, sugar, evaporated milk, and vanilla to a boil.
- Cook for about 5 minutes on medium heat, stirring constantly, after adding the pecans and coconut.
- Spread the topping evenly over the cake, slice, and serve!
