Garlic Butter Shrimp Scampi Lasagna 🧈🧀
Ingredients:
For the Shrimp Scampi:
1 lb large shrimp, peeled and deveined
4 tbsp unsalted butter
4 cloves garlic, minced
1/4 cup white wine or chicken broth
1/4 cup fresh parsley, chopped
1/2 tsp red chili flakes (optional)
Salt and pepper to taste
For the Cheese Mixture:
2 cups ricotta cheese
1 cup grated Parmesan cheese
1 large egg
1/2 tsp Italian seasoning
Salt and pepper to taste
For the Lasagna:
9 lasagna noodles, cooked according to package instructions
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Prepare the Shrimp Scampi:
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Pour in the white wine (or chicken broth) and let it simmer for 2-3 minutes. Stir in the chopped parsley and red chili flakes (if using). Season with salt and pepper to taste. Remove from heat and set aside.
Make the Cheese Mixture:
In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix until well combined.
Assemble the Lasagna:
Spread a thin layer of the shrimp scampi sauce on the bottom of a 9×13-inch baking dish.Place 3 lasagna noodles over the sauce. Spread half of the cheese mixture over the noodles, followed by a third of the shrimp scampi mixture and a third of the shredded mozzarella cheese.Repeat the layers: noodles, cheese mixture, shrimp scampi, and mozzarella. Finish with a final layer of noodles, the remaining shrimp scampi, and the remaining mozzarella cheese. Sprinkle the top with grated Parmesan cheese.
Bake:
Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes, or until the top is bubbly and golden brown.
Serve:
Let the lasagna cool for 10 minutes before slicing. Garnish with additional chopped parsley if desired.
