This hearty slow cooker beef and potato au gratin is a comforting dish perfect for a cozy family dinner. Layers of tender russet potatoes, seasoned ground beef, onions, and melted cheese are slow-cooked to perfection, creating a satisfying meal with minimal effort.
Ingredients:
2 pounds ground beef
3 pounds russet potatoes, peeled and sliced 1/4 inch thick (about 7 cups total sliced)
1 cup thinly sliced onion
1 teaspoon paprika
1/2 teaspoon garlic powder
1 teaspoon salt
1 teaspoon black pepper
3 cups shredded sharp cheese (such as cheddar)
3/4 cup beef broth
1 can (10.75 oz) condensed cheddar cheese soup
Directions:
Prepare the Ingredients:
In a skillet over medium-high heat, brown the ground beef until fully cooked. Drain any excess fat and set aside.
Layer the Ingredients in the Slow Cooker:
In a small bowl, combine paprika, garlic powder, salt, and black pepper.
Layer half of the sliced potatoes in the bottom of a slow cooker.
Spread half of the condensed cheddar cheese soup over the potatoes.
Sprinkle half of the sliced onions, half of the seasoning mixture, half of the cooked ground beef, and half of the shredded cheese over the potatoes and soup.
Repeat the layers with the remaining potatoes, onions, seasoning, ground beef, and shredded cheese.
Cook the Au Gratin:
Drizzle the beef broth evenly over the top of the layers in the slow cooker.
Cover and cook on high heat for 4 hours, or until the potatoes are tender and cooked through.
Serve:
Once cooked, serve the beef and potato au gratin directly from the slow cooker. Scoop out generous portions onto plates and enjoy this comforting dish with your favorite side salad or vegetable.
