Parmesan Chicken Piccata Meatballs
INGREDIENTS:
– 1 lb ground chicken
– 1/4 cup breadcrumbs
– 1/4 cup grated Parmesan cheese
– 1 egg
– 2 cloves garlic, minced
– 1 tablespoon fresh parsley, chopped
– Salt and pepper to taste
– 1 tablespoon olive oil
– 1/2 cup chicken broth
– 1/4 cup lemon juice
– 1 tablespoon capers
INSTRUCTIONS:
1. Preheat your oven to 400°F (200°C).
2. In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, beaten egg, minced garlic, chopped parsley, salt, and pepper. Stir until well incorporated.
3. Shape the mixture into meatballs and arrange them on a baking sheet.
4. Bake the meatballs in the oven for 20 to 25 minutes, or until fully cooked.
5. While the meatballs are baking, heat olive oil in a skillet over medium heat. Pour in the chicken broth, lemon juice, and capers, and bring the mixture to a gentle simmer.
6. Once the meatballs are cooked, transfer them to the skillet and stir gently to coat them in the sauce.
7. Serve the meatballs warm and enjoy!
