Pineapple Cucumber Salad
Ingredients
Salad
1 pineapple, peeled and cut into chunks
1 cucumber, seeded and sliced into half-moon shapes
1 red onion, thinly sliced
1 jalapeño, seeded and diced
1 avocado, peeled and diced
1 red bell pepper, diced
¼ cup cilantro, chopped (optional)
Salad Dressing
2 tablespoons (30 ml) lime juice
¼ cup (60 ml) olive oil
2 tablespoons (30 ml) honey
½ teaspoon (1 g) red pepper flakes
1 teaspoon (5 ml) white vinegar
Salt and pepper, to taste
Instructions
Step 1: Prepare the Ingredients
Peel and cut the pineapple into bite-sized chunks.
Seed the cucumber and slice it into half-moon shapes.
Thinly slice the red onion, dice the jalapeño (after seeding), and chop the red bell pepper.
Dice the avocado just before assembling the salad to prevent browning.
If using, chop the cilantro.
Step 2: Make the Dressing
In a small bowl, whisk together lime juice, olive oil, honey, red pepper flakes, and white vinegar.
Season with salt and pepper to taste.
Step 3: Combine and Toss
In a large salad bowl, combine pineapple, cucumber, red onion, jalapeño, avocado, red bell pepper, and cilantro.
Drizzle the dressing over the salad and toss gently to coat all the ingredients.
Step 4: Serve
Serve immediately or chill for 15-20 minutes to let the flavors meld.
Notes
Cilantro Substitute: If you don’t like cilantro, you can substitute with parsley or leave it out altogether.
White Vinegar Substitute: You can use rice vinegar or apple cider vinegar for a different flavor profile.
