Ingredients:
– 2 boneless, skinless chicken breasts
– Salt and black pepper, to taste
– 2 tablespoons olive oil
– 2 tablespoons unsalted butter
– 2 cups mushrooms, sliced
– 4 garlic cloves, minced
– 1 cup chicken broth
– 1/4 cup heavy cream
– 1 teaspoon dried thyme
– 3 cups fresh spinach
– Cooked pasta or rice (optional)
Directions:
1. Season chicken breasts with salt and black pepper.
2. Heat olive oil in a skillet over medium heat. Cook the chicken for 5-6 minutes per side until golden and fully cooked. Remove and set aside.
3. In the same skillet, melt the butter. Add mushrooms and sauté until browned, about 5 minutes.
4. Add garlic and cook for 1 minute until fragrant.
5. Stir in chicken broth, heavy cream, and thyme. Simmer for 5 minutes until the sauce slightly thickens.
6. Add spinach and cook until wilted, about 2 minutes.
7. Return the chicken to the skillet and spoon the sauce over it. Cook for another 2 minutes to heat through.
8. Serve warm over pasta or rice if desired.
