Ingredients
2 tablespoons unsalted butter
1 medium onion, chopped
2 cloves garlic, minced
4 cups diced potatoes (peeled or unpeeled)
2 cups diced cooked ham
4 cups chicken broth
2 cups whole milk
1 cup heavy cream
1 1/2 cups shredded sharp cheddar cheese
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
1/2 teaspoon dried thyme
1/2 teaspoon smoked paprika (optional)
Fresh parsley, chopped (for garnish, optional)
Directions
Sauté the Aromatics:
In a large pot, melt the butter over medium heat.
Add the chopped onion and garlic, cooking until softened and fragrant, about 3-4 minutes.
Cook the Potatoes and Ham:
Add the diced potatoes and ham to the pot. Stir to combine with the onion and garlic.
Pour in the chicken broth, bring to a boil, then reduce the heat and simmer for 10-15 minutes, or until the potatoes are tender.
Add Dairy and Seasonings:
Stir in the milk and heavy cream.
Add salt, pepper, dried thyme, and smoked paprika (if using). Bring the soup back to a simmer and cook for an additional 5-7 minutes to allow the flavors to meld together.
Make it Creamy:
Use a potato masher to mash a portion of the potatoes in the soup for a thicker, creamier texture (optional).
Stir in the shredded cheddar cheese until it is fully melted and the soup is creamy.
Serve:
Ladle the soup into bowls and garnish with chopped parsley if desired. Serve with crusty bread or crackers on the side for a complete meal.
